Clove Water (vegetarian, gluten-free)

Ingredients:

1/2 oz cloves Syzygium aromaticum (a little less than 1/4 cup)
water
1 cup vodka or other consumable high proof alcohol


Instructions:

You are going to be making clove extract, which you can add to any water at any time to make clove water.
If plain tap water upsets your stomach, try clove water.
You will be extracting the clove oil twice using alcohol, before blending remaining clove solids with water for subsequent extractions.
Before the first 2 extractions, clove has so much resin, that grinding it in a grinder or blender will make that utility difficult to clean.

In a small (preferably glass) pot put the whole cloves and 1/2 cup of vodka (alcohol).
Always pay attention when you are heating alcohol! 
Heat to a simmer, then cover the pot and turn off the flame.
If you are using an electric range, lift the pot off the range.
Allow to cool to room temperature.
Strain liquid into bottle for later.  The bottle should have a lid and hold about 16 oz liquid.
Repeat procedure with same 1/2 oz of cloves, and another 1/2 cup alcohol.

Now that you have 2 extactions in alcohol, you can blend the clove solids with 3/4 cup water in a blender.
Blend just enough to chop up the solids, so they will extract easier.
Pour the blended mixture back into the same pot, okay to cover.  Bring to a boil.
Turn off heat and allow to stand until mixture reaches room temperature.
Strain liquid into bottle for refrigeration.

Now you have somewhat less than 2 cups of clove extract. 
You could call this done or repeat one more water extraction, using the same clove solids in another 1/2 cup water and 1/4 cup alcohol.

When you are done, the bottle with clove extract can be kept on the shelf or in the refrigerator.

How much clove do you add to a glass of water?  That depends you your taste.  I recommend trying 1 teaspoon to 12 oz of water for your first taste.

Notes:

NOTE 1:  The vodka or alcohol you use on the first two extractions will mostly evaporate off, leaving water with a much smaller amount of alcohol.  The remaining alcohol will be just enough to prolong the shelf life of the extract so that it won't require refrigeration for a couple of weeks.

NOTE 2:  Benefits of drinking clove water:
  • Better digestion
  • Fewer flea and mosquito bites (your skin/blood will not smell as attractive to fleas/mosquitos)
